Sunday afternoon snacky! After a long day with the kids I decided to do this simple appetizer. This is a variant on one of Gordon Ramsay’s (interesting how “variants” are derived due to not having the right ingredients at hand).
Very simple to do. The ingredients list:
- 2 cups or fresh shelled peas
– coarse salt + black pepper
– 1 tbsp of mascarpone
– 1 tbsp olive oil
– ciabatta loaf
– freshly grated parmesan cheese
Simply boil the peas for 3-4 minutes in salted water. Strain, then in a bowl add the mascarpone, olive oil, salt, pepper, and the peas.Tip this into a food processor and pulse it to a rough paste. Cut the ciabatta into slices and throw onto a cast iron pan or grill, toast them up. To serve, add a heap of spread onto the crispy toast, grate the cheese, grind a little salt and pepper, and drizzle with olive oil! absolutely wonderful!
