Wednesday nights are usually “Daddy night”. Mommy is out at meetings, and suppers are simple quick and easy (leaves more time to play before bedtime!)
We made simple ham and cheese quiche with raw zucchini slices (so good) and boiled mini carrots. This simple and fluffy quiche is:
- 3/4 cup of onions – chopped
– 2 tsp of butter
– 1 cup of grated cheese (cheddar + mozzarella)
– 1 cup of deli ham (chop it up)
– 1 pie crust or what I like is the Pillsbury Pie Crusts
– 1 1/3 cup of homogenized milk
– 4 eggs
– 1 tbsp of mustard
– salt + pepper
Chop the onions, place into a bowl with the butter, and microwave for 2 minutes, simple! Lay the Pillsbury pastry into a pie pan, throw in the ham, cooked onions, and cheese. In a separate bowl, mix the eggs, milk, mustard, salt + pepper. Gently pour into the pie crust. Bake at 350F for 50 minutes. As for the carrots, I like to boil them with olive oil, and a few sprigs of thyme. Yum
For dessert, we decided to improvise. A slice of Chinese sponge cake, a scoop of vanilla bean ice cream, sprinkled with Oreo cookie crumbles, and dotted with juicy fruit gummies
